This publication details the latest national statistics produced by Department for Environment, Food and Rural Affairs on the slaughter of cattle, sheep and pigs, dressed carcase weights and meat production taken from surveys of slaughterhouses run by the UK Agricultural Departments.

UK Slaughter Statistics
UK clean sheep slaughterings for July 2014 were 1270,000 head and mutton and lamb production was 29,000 tonnes.
